Lupine ceviche in the Ecuadorian Andes With less than 30 years of history, Riobamba lupin ceviches have managed to earn a good place on the gastronomic map of Ecuador. A group of Riobambeñas at the end of the last century, found in the pork chochos, roasting and leather, an opportunity to start itinerant food businesses. The innovation prompted these vendors to incorporate tomato juice, thus adopting the name of ceviche. This ceviche is made up of lupins, tomato juice, pork skin, onions, mincemeat and is accompanied with canguil, toast and chifles, they also offer two types of chili, the strong one that really contains chili and is tomato-colored; or the soft one that is a lupine smoothie without chili and is white. Apart from its traditionality, this dish is very nutritious since the chocho has a large amount of calcium that contributes to the strengthening and care of the bones. In the Coliseum, the stand of Doña Mari stands out
