There is a rich variety of fresh products, legumes, fruits and vegetables. As far as gastronomy is concerned, you can taste between traditional and typical dishes. Salt juice. Among other dishes of Riobambeña gastronomy. The best hornado in the world is from Riobambeño The flavor of Riobambeño hornado stands out among the proposals that from Carchi, Pichincha, Tungurahua and Azuay are offered to tourists who arrive in Ecuador. The hornado is in the market from Monday to Sunday. Riobambeño hornado is distinguished by its chiriucho: a fine juice sour flavor prepared with chicha, beer, onion and chili. In Riobamba the hornado is accompanied with mote, lettuce and tomato. Its particular chiriucho stands out, which in the Sultana de los Andes, is a "sour". Riobambeño salt juices The salt juice bears this name because it is a thick and salty drink, which contains the juice of the meat or meat stew, almost fried eggs and picadillo (crushed coriander). The ingredients are manually beaten and served hot, with a few drops of lemon, in a glass. This preparation is known as "raise dead", since it is highly recommended to combat "chuchaqui". Typically Riobambeño, this dish was born in the iconic Mercado de la Merced where Doña Luna has it available every day of the year. Break necks with ice from Chimborazo One of the greatest traditions of the central Sierra of Ecuador is, without a doubt, the famous "Riobambeño neckbreakers". They consist of natural fruit juices liquefied with ice from the Chimborazo volcano, the same one that in ancient times, due to lack of technology, was used to keep food fresh, and that today is used to refresh natural drinks. These delicious drinks are called nape breakers, due to the strong icy sensation that they cause in the head when ingesting them abruptly. It is still possible to find this juice, just as it was prepared more than a century ago, thanks to the last ice maker of Chimborazo, Baltazar Ushca, who since he was 15 years old climbs the snowy Chimborazo and with his pick and shovel, extracts the ice. Baltazar delivers the ice to the neckbreaker sellers twice a week, Tuesday and Thursday. One of the Merced vendors that stands out is Rosita Almachi with her delicious neckbreaker. Dark-haired empanadas Prepared with morocho flour, they are fried in oil and inside they contain a condumio of peas, yellow carrot, onion and meat. They are served alone or with varieties of chili and are the perfect company for a coffee. Pork cheese, hams and pickles Combined in delicious sandwiches and accompanied with a variety of fruit juices, pork and pork cheeses have been served since the last century at the Fuente de Bar Hugos, located outside La Merced.
